Watermelon Mocktail + Cocktail

 

Summer is just around the corner! I thought it would be fun to teach the kids the art of crafting a watermelon drink. The homeschooling “home ec” class was in session. It began as a Mocktail for the kids and ended up as a Cocktail for the adults. Regardless which you prefer, it is delicious and fun to make with the kiddos.

We had so much fun making this. I loved watching Miles and Sailor work together, laughing and giggling the entire time.

Ingredients:

– 1 cup still water

– 1 cup granulated sugar

– 9 cups cubed seedless watermelon (approximately 2 small seedless watermelons)

– 1 cup freshly squeezed lemon juice (about 7 lemons)

– 1/8 teaspoon kosher salt

– ice cubes

Instructions:

– To make simple syrup: in a saucepan over medium-low heat, bring the water and sugar to a simmer, stirring occasionally, until the sugar is fully dissolved. Cool the syrup to room temperature.

– Working in batches, liquify the watermelon in a blender and strain the puree through fine mesh sieve. Reserve the liquid and discard the solids. Measure 6 cups watermelon juice.

– In a pitcher, stir together the syrup, watermelon juice, lemon juice and salt. Refrigerate until cold. Serve over ice cubes.

– Add some salt to taste and enjoy!
